I was instantly enamored with those tiny, imperfect noodles. With every visit to my husband’s grandparents, my desire for these delectable noodles grew stronger. Finally, I mustered the courage to ask for the recipe, only to discover that, true to his grandfatherly ways, nothing was written down.

Thus began my journey of learning to cook alongside grandpa. Standing by his side, notebook in hand, I absorbed every detail of the process. However, one challenge remained: the elusive contraption used to shape the wet dough into those perfect little imperfect noodles.

Now, let’s cook the star of the show: the spaetzle noodles. With just four simple ingredients, they’re remarkably easy to make yet incredibly delicious. Whether enjoyed on their own or with Chicken Paprikash or pan-fried with bacon, these noodles are sure to elevate any meal.

Four Ingredient Homemade Pasta: Nokedli or Spaetzle Recipe

Prep Time 2 minutes
Cook Time 6 minutes
Total Time 8 minutes

Ingredients

  • 2 Eggs
  • Salt
  • 3/4 cups Water plus water for boiling
  • 2 cups All Purpose Flour
  • Butter

Instructions

  1. Bring a pot of salted water to a boil
  2. Mix 2 eggs, 1/2 teaspoon salt, 3/4 cups water and 2 cups flour together. This will be a wet dough
  3. Pour half the dough into spaetzle maker and move the square piece back and forth to create tiny noodles
  4. Stir the noodles once and they will rise to the surface of the boiling water. Wait 2 mins and remove
  5. Repeat with remaining dough
  6. Add butter and a little more salt to the finished Nokedli or Spaetzle

Notes

This wet dough should resemble a waffle batter in consistency. Add flour or water to adjust as needed.
