Octopus Salad Recipe
Traveling inspires me to take new adventures and try new foods. One of my favorite Portuguese dishes has to be Octopus Salad. It is bright, citrusy, herby, and full of flavor. It is a great balance of textures too. When cooked properly, the octopus is very tender. It is not fishy tasting at all. It is a high protein source and rich in vitamin B12, selenium, iron, copper, and vitamin B6. I challenge you to make this and try something new. Octopus Salad Recipe

Ingredients
- Frozen Octopus 1kg or 2.2lbs
- Garlic
- 2 Shallots
- 2 lemons
- Olive Oil
- Tomato
- Red Bell Pepper
- Parsley
- Salt
Instructions
- 1kg or 2.2lbs frozen octopus that is "ready to cook"
- Thaw it in the fridge overnight
- Rinse it
- Boil it for 40mins in water seasoned with
with 4 garlic cloves, 1 shallot and half a lemon, salt - Once the octopus is cooked, allow it to fully cool
- Slice it
- Mix 1/2 cup olive oil, 1 diced shallot, 2 diced garlic cloves, 3/4 lemon juiced, 1/2 diced tomato, 1/4 diced red bell pepper and a handful of parsley. Season with salt.
- Add the sliced octopus to the salad. It is great right away, but if you have time let it marinate for 30 minutes.
Notes
- Some great additions would be cilantro and cucumbers.
